Ingredients
  

Vegetables
  • 2 Bell Peppers Red, yellow or green
  • 1 Zucchini Sliced into rounds
  • 1 cups Mushrooms Whole or halved
  • 1 Red Onion Cut into chunks
Dressing
  • 1 tbsp Olive Oil
  • 2 tbsp Balsamic Vinegar (sugar-free)
  • 0.5 tsp Dried Thyme
  • 0.5 tsp Dried Rosemary
  • tbsp Optional: Feta Cheese For garnish

Method
 

Preparation
  1. Chop vegetables into even chunks. Toss in bowl with olive oil, balsamic vinegar, thyme, and rosemary.
Grilling
  1. Thread veggies onto skewers. Grill over medium-high heat for 10–12 minutes, turning occasionally, until lightly charred.
Serving
  1. Top with crumbled feta if desired. Serve warm.

Serve as a vibrant side dish or a light meatless main. Optional: top with crumbled feta.
