- Preheat your oven to 375°F (190°C). Flatten the chicken breasts to an even thickness. Season with salt and pepper.
Cooking
- Dip each chicken breast in beaten egg, then coat with breadcrumbs. Heat olive oil in a skillet over medium heat. Fry the chicken until golden brown on both sides, about 4-5 minutes each. Place the fried chicken in a baking dish. Top each piece with marinara sauce and mozzarella cheese. Bake in the oven for 20 minutes or until the cheese is bubbly. Sprinkle with grated Parmesan before serving.
